Recipes from Saturday's Long Run

Okay so I've had so many people ask me for the recipes of some of the dishes I had for our Saturday long run a few weeks ago, that I decided it'd be easiest to just post them on my blog so anyone who wants them can get them. So here they are...

Blue Berry Crunch
4 cups blueberries
1 cup of firmly packed brown sugar
3/4 cup of flour
3/4 cup of quick oatmeal
1/2 cup butter (melted)

Bake @ 350

Place Blueberries in 2 quart baking dish. Spread out evenly. Combine remaining ingredients and sprinkle over blueberries. Bake for 45 minutes.
I usually make a double batch of the topping and I put half the blueberries in the pan then some of the topping and then the rest of the blueberries and topping.

Egg & Italian Sausage Casserole
12 eggs
1 tsp. pepper
1 tsp. salt
1 tsp. garlic
1 pkg. fresh mushrooms
2 fresh Italian sausages (I couldn't find Italian, so I had used smoked)
1 small can of condensed milk - not sweetened (again I could not find the non-sweetened kind so I had used sweetened, a bit of a different taste, but good either way.)
1/4 cup Shredded cheddar cheese

Mix eggs, garlic, salt and pepper. Stir in mushrooms, milk and cheese. Cut sausage into small pieces, fry and then add to egg mixture. Put into a 9X13 glass baking dish. Bake for 30 minutes.

Granola
3 cups whole wheat flour
3 tsp soda
2 tsp salt
3 cups brown sugar
12 cups old fashion oats
2 cups melted butter
(2 cups coconut - I do not use)

Mix together by hand. Toast in over at 250' for 1 1/2 hours or until golden brown and crispy. Stir every 15 to 20 minutes. Add silvered almonds, Chocolate chips or raisins if desired.
One side note, if you prefer bigger chunks of granola don't mix as much.

French Toast Casserole
16oz loaf french bread cubed
8oz pkg cream cheese
1/2 cup butter
1/4 cup pancakes syrup
10 eggs
1/2 tsp salt
1 cup milk
1 cup french vanilla coffee creamer
1 1/2 tsp cinnamon
1 1/2 cup strawberries - drain if using frozen (optional)
1/2 cup sugar (use only if using strawberries)

Cube entire laof of bread: setaside
Place cream cheese, butter and syrup in very large glass mixing bowl; microwave on 50% power for 1 to 2 minutes, until softened. Beat with electric mixer until smooth; add eggs, beat until well blended. Add salt, milk, creamer and cinnamon; beat until well blended.
Place bread cubes into egg mixture and mix well by hand. Place mixture into greased glass 9X13 baking dish, cover and refrigerate over night.
One hour before serving, remove casserole from refrigerator slice strawberries and toss with sugar. Pour sweetened strawberries over casserole.
Bake, uncovered at 350' for 45 to 50 minutes until golden brown around sides. Cool slightly before serving.
