Recipes from Saturday's Long Run

Okay here are two of the recipes that were asked for from today's long run. If there is another one you'd prefer to have just let me know.

Granola

3cups whole wheat flour (I used white)
3tsp baking soda
2tsp salt
3cups brown sugar
12 cups old fashion oats
2cups melted butter
(2cups coconut - I do not use)

Mix together by hand. Toast in oven at 250 degrees for 1 1/2 hours or until golden brown and crispy. Stir every 15 to 20 minutes (unless you want bigger chunks then stir every 1/2 hour).
Items to add to your liking after mix is toasted; slivered almonds, chocolate chips or raisins.

Orange Carrot Cake

2cups sugar
3 cups all purpose flour
1 cup coconut
2 1/2tsp baking soda
2 1/2tsp cinnamon
1tsp salt
1 1/4cup cooking oil (I think I forgot to put this in for this mornings cake)
2cups (4med) carrots; shredded (I buy preshredded kind)
1 1/4tsp vanilla
1 11oz can mandarin oranges (undrained)
3 eggs

preheat oven to 350'. Grease 9x13 inch pan. In large bowl blend above ingredients. Beat two minutes at highest speed. Pour ingredients in greased pan. Bake 55 minutes. cool.

Frosting
(I double mine)
8oz pkg cream cheese softened
2tbsp butter; melted
1tsp vanilla
3cup powdered sugar
In medium bowl blend ingredients until smooth. Put on top of cake once cake has cooled.

Store cake in refrigerator.
